February's Alphabet: C is for Cooking

I love cooking and trying new recipes. Being on the Slimming World has opened a few challenges - I love cooking with lots of cheese & infused oil - big NO if you want to loose those pounds! I've had to discover new ways to add the flavours I love to cook with, without the sugars and fats. 

These are a couple of my (easy) favourites; Slimming world approved (no quantities, as I tend to make it up as I go along - use as much or as little as you please)...

Mac & Cheese
Stir some Laughing Cow Light cheese triangles into freshly cooked pasta along with one fried onion, add lots of ground pepper, a pinch of salt, some curry powder and a tiny amount of mustard (any kind). Put into an oven proof dish, top with cheddar cheese and a sprinkle of curry power, ground pepper and some cooked couscous (makes great fake breadcrumbs) and bake until crispy. 

Boulanger Potatoes
Thinly slice potatoes and white onions and layer alternately into an oven proof dish. Dissolve a veg/chicken/beef Oxo cube in boiling water and pour over the potatoes and onions. Cover with foil and bake at 180 degrees for 1 hour. Take the foil off and bake for a further 30 minutes. 

And when I want to treat myself - these are my favourite choices (again, no quantities - soz)...

Stuffed Chicken
Slice a chicken breast open, fill with red pesto, any cheese of your choice (I love extra mature cheddar) and wrap up with parma ham. Bake in the oven with some new potatoes.

Smothered Lamb and Chorizo
Chop potatoes and chorizo into similar sized chunks. Put the potatoes and rack of lamb into an oven proof dish along with some shallots and roast in the oven. Once crisp, add the chorizo and mix in a tin of Campbell's condensed mushroom soup and pop back in the oven for 15 minutes.
